Cooking steps of “Three-Cup Hericium Erinaceus”

  1. If you are preparing with dry hericium erinaceus, you need to soak the ingredient for 15 minutes before making the dish. You then cut off the stems and wash them repeatedly for 6-7 times until the water becomes clear, then blanch them in boiling water for 1 minute. Afterwards, use boiled water to wash the ingredient twice, and then squeeze the water out of the hericium erinaceus to complete the pre-processing. (If you are using fresh hericium erinaceus, the above steps can be omitted.)
  2. Peel and slice the garlic clove, mince the pepper, and shred the Thai basil for later usage.
  3. Using a frying pan or cast-iron pan, stir-fry the hericium erinaceus over a low heat, keep on stir-frying until the water is dried and the fragrance smelled. Set them aside for later use.
  4. Add olive oil to the pot, stir-fry garlic slices, ginger slices, and pepper minces, until they are semi-dried.
  5. Add in the dried hericium erinaceus, stir-fry them evenly.
  6. Add in the sesame oil, rice wine, soy sauce, cube sugar and 1 cup of water, continue to stir-fry to let go the water.
  7. Finally, add the salt and the Thai basil, stir-fry a little bit more, then the job is done.
