What is the difference between a banquet and a buffet? How can we combine traditional and modern banquet experience?

    宴客

Traditional banquets and buffets are two different ways of entertaining guests, each with its own unique features. Banquets emphasize etiquette and formality, and are usually used in special occasions such as weddings and festive events. Guests sit in designated seats and enjoy meals according to a fixed menu. Buffet banquets are more flexible and casual, and guests can freely choose the dining time and location and take their own meals, which is suitable for casual gatherings.

With the changes in culture and times, the modern banquet experience focuses more on innovation and personalization. Through the innovation of menu design and presentation, a new generation of delicious and traditional dining experience can be created. The overall dish design can consider the seasoned dishes, so that the chef does not need to spend too much time preparing and seasoning the dishes, but can focus more on the details and quality of the signature dishes. Combining modern production technology with traditional culinary art, it brings different sparks to the new generation of banquet experience. Now let us first understand the difference between traditional banquets and buffets!

What is a banquet?

"Office"Banquet" comes from the pronunciation of Taiwanese and is a traditional way of entertaining guests. In ancient times, banquets were often seen as a social activity, a way to show the host's status and generosity. Banquets are usually held on special holidays, such as weddings, funerals, moving into a new house, full-month birthdays, teacher farewell parties, year-end banquets, spring banquets, temple fairs, etc. Banquets can be held in the form of banquets. It is an important ritual to show human touch and etiquette.

The banquet is usually held in a tent on the roadside or in a temple square, school or local community activity center. A simple stove and a table for preparing food are set up nearby, and the ingredients are cooked on the spot. The dishes and process of the entire banquet are dominated by the "Chief Chef", under the head chef there will be skilled and unskilled workers assisting. The skilled worker serves as the head chef's assistant and is responsible for cooking, while the unskilled workers are temporary workers responsible for cutting vegetables, serving food or washing dishes.

What are the classic dishes for banquets? The order of serving dishes should focus on the beginning, development, transition and ending.

Generally speaking, there are 12 dishes at a banquet, which can be divided into 4 categories: cold dishes, main courses, soups, and dim sum. Cold dishes are usually served first as appetizers to satisfy the cravings of guests who sit down first. Then the chef's homemade dishes may be served, followed by soups and dim sum. The order of serving dishes at the banquet focuses on the beginning, development, transition, and ending, so that the guests can eat well and skillfully.
